Wattle is named for the Derwent Wattle, a variety of Yellow Flowering Acacia found only in Tasmania. Twice a year it bursts into bright, fresh lemon yellow blossom, and I’ve developed this glaze to capture that burst of colour. There's an unmistakable scent that lifts off the flowers as the late spring sun warms them, and that sensory memory- sun, scent, and colour together are uniquely Tasmanian for me.
Each rim is individually hand-trimmed to a fine edge; sized for a short black, macchiato or a small piccolo.
